Hardness
testing of food: In
order to determine the hardness and flexibility of food, there can be
performed penetration tests with the texture analyzer. Therefore the careful
selection of the right tool for the texture analyzer is essential. Cylindrical
indenters mainly create vertical forces, meanwhile with spherical tools the
horizontal forces increase with the cumulative penetration. By selecting the
right tool, there can be gained good results by means of the texture analyzer.
To determine the resistance of bread for example, the texture analyzer allows
determining the CFV (Compressive Force Value). Therefore slice of bread with a
specific size will be compressed by a cylindrical tool as long as the
compression counts 25%. Thus the collected value helps maintaining quality and
can be compared to other products.
Elasticity of food: The elasticity of certain
amounts of pastry or chewing-gum can be determined by using the texture
analyzer. By recording a force-path diagram by means of the texture analyzer,
the characteristics of these products can be defined very accurately. Thus
